- ½ cup red bell pepper, diced
- ½ cup green bell pepper, diced
- ½ small red onion, finely chopped
For the Creamy Chill Factor:
- 1 cup sour cream or Greek yogurt
- ½ cup salsa verde (or regular salsa)
- ½ cup shredded Mexican cheese blend
- ½ tsp garlic powder
- ½ tsp cumin
- ½ tsp smoked paprika
For Garnishing:
- Crushed tortilla chips
- Diced avocado
- Chopped fresh cilantro
- Sliced jalapeños

- Prepare the Soup Base: In a large mixing bowl, combine the cooled beef, black beans, diced tomatoes, corn, bell peppers, and red onion. Stir well.
- Make It Creamy: In a separate bowl, whisk together sour cream (or Greek yogurt), salsa verde, shredded cheese, garlic powder, cumin, and smoked paprika.
- Chill & Combine: Pour the creamy mixture into the soup base, add the cooled beef broth, and stir until well mixed. Cover and refrigerate for at least 1 hour.
- Serve & Garnish: Ladle the chilled soup into bowls. Top with crushed tortilla chips, diced avocado, cilantro, jalapeños, and a squeeze of lime.
