Ingredients

Scale

For the Soup Base:

  • 1 lb ground beef or turkey
  • 1 packet (or 2 tbsp) taco seasoning
  • 1 cup beef broth, cooled
  • 1 can (15 oz) black beans, drained & rinsed
  • 1 can (15 oz) diced tomatoes with green chilies, drained
  • 1 cup corn kernels (fresh, frozen, or canned)
  • ½ cup red bell pepper, diced
  • ½ cup green bell pepper, diced
  • ½ small red onion, finely chopped

For the Creamy Chill Factor:

  • 1 cup sour cream or Greek yogurt
  • ½ cup salsa verde (or regular salsa)
  • ½ cup shredded Mexican cheese blend
  • ½ tsp garlic powder
  • ½ tsp cumin
  • ½ tsp smoked paprika

For Garnishing:

  • Crushed tortilla chips
  • Diced avocado
  • Chopped fresh cilantro
  • Sliced jalapeños
  • Lime wedges

Instructions

Instructions

  1. Cook the Meat: In a skillet over medium heat, cook the ground beef (or turkey) until browned. Drain excess fat, then stir in taco seasoning and ¼ cup water. Simmer for 2 minutes, then remove from heat and let cool.
  2. Prepare the Soup Base: In a large mixing bowl, combine the cooled beef, black beans, diced tomatoes, corn, bell peppers, and red onion. Stir well.
  3. Make It Creamy: In a separate bowl, whisk together sour cream (or Greek yogurt), salsa verde, shredded cheese, garlic powder, cumin, and smoked paprika.
  4. Chill & Combine: Pour the creamy mixture into the soup base, add the cooled beef broth, and stir until well mixed. Cover and refrigerate for at least 1 hour.
  5. Serve & Garnish: Ladle the chilled soup into bowls. Top with crushed tortilla chips, diced avocado, cilantro, jalapeños, and a squeeze of lime.

Notes

  • Low-Carb Option: Skip the corn and tortilla chips or use low-carb tortillas.
  • Make it Spicier: Add extra jalapeños, chipotle powder, or hot sauce.
  • Storage: Store in an airtight container in the fridge for up to 3 days. Stir before serving!

  • Serving Idea: Serve with warm quesadillas or a side of crunchy tostadas.
