  • 2 lbs (900g) fresh strawberries, hulled and chopped
  • 2 cups (400g) granulated sugar
  • 2 tbsp fresh lemon juice
  • 1 tsp lemon zest (optional, for extra flavor)

Instructions

  • Prepare the Strawberries:

    • Wash, hull, and chop the strawberries into small pieces. If you prefer a smoother jam, mash them slightly with a fork or potato masher.
  • Mix Ingredients:

    • In a large pot, combine the chopped strawberries, sugar, and lemon juice. Stir well and let sit for about 15–20 minutes to allow the berries to release their juices.
  • Cook the Jam:

    • Place the pot over medium heat and bring to a gentle boil, stirring occasionally. Once boiling, reduce the heat to low and let it simmer for 25–30 minutes, stirring frequently.
    • As it thickens, use a spoon to remove any foam that forms on the surface.
  • Check for Doneness:

    • To test if the jam is ready, place a small spoonful on a cold plate and tilt it. If it wrinkles slightly and doesn’t run, it’s done. If too runny, continue simmering for another 5–10 minutes.
  • Jar and Store:

    • Pour the hot jam into sterilized jars, leaving about ¼ inch of space at the top. Seal tightly and let cool at room temperature.
    • Store in the refrigerator for up to 3 weeks or process in a water bath for long-term storage.

Notes

  • If using frozen strawberries, thaw them first and drain excess liquid.
  • Add a vanilla bean or cinnamon stick while cooking for a unique twist.
  • This recipe can be doubled or halved depending on your needs.
