Base Ingredients
- 4 large russet potatoes, peeled and diced
- 1 medium yellow onion, finely chopped
- 3 cloves garlic, minced
- 4 cups chicken broth (or vegetable broth for a vegetarian option)
- 2 cups whole milk (or half-and-half for extra creaminess)
- 1/2 cup heavy cream
Seasonings
- 1 teaspoon salt (adjust to taste)
- 1/2 teaspoon ground black pepper
- 1/4 teaspoon smoked paprika (optional)
Toppings (Optional)
- Crumbled cooked bacon
- Shredded cheddar cheese
- Chopped green onions
- Sour cream
Thickener (Optional)
- 2 tablespoons all-purpose flour (or cornstarch)
- 2 tablespoons butter
Instructions
Prepare the Potatoes:
Peel and dice the potatoes into small, even-sized cubes for uniform cooking.Cook the Base:
- In a large pot, melt butter over medium heat. Add the chopped onion and sauté until softened, about 5 minutes.
- Add the minced garlic and cook for another 1 minute, stirring constantly to prevent burning.
Simmer the Potatoes:
- Add the diced potatoes and chicken broth to the pot. Bring to a boil, then reduce the heat to low and simmer for 15–20 minutes, or until the potatoes are tender and easily pierced with a fork.
Blend for Creaminess (Optional):
- Use an immersion blender to partially blend the soup, leaving some chunks of potato for texture. Alternatively, transfer half of the soup to a blender, blend until smooth, and return it to the pot.
Add Milk and Cream:
- Stir in the milk and heavy cream. If you’d like a thicker soup, make a slurry by whisking together the flour and butter, then stir it into the soup. Simmer for an additional 5–10 minutes, stirring occasionally.
Season and Serve:
- Season the soup with salt, pepper, and smoked paprika (if using). Taste and adjust seasoning as needed.
Add Toppings:
- Serve the soup hot, garnished with your choice of toppings like crumbled bacon, cheddar cheese, green onions, or a dollop of sour cream.
