Ingredients
Scale
For the Soup Base:
- 2 tbsp olive oil or butter
- 1 small onion, finely chopped
- 2 celery stalks, diced
- 2 carrots, diced
- 2 garlic cloves, minced (optional for mild flavor)
- 6 cups (1.5 L) chicken or turkey broth (unsalted or low sodium)
- 2 cups cooked turkey, shredded or diced
- 1 cup (150 g) potatoes, diced (optional)
- Salt to taste
Optional Garnishes:
- Chopped parsley
- Cracked black pepper
Instructions
1. Sauté the Vegetables:
- Heat the olive oil or butter in a large pot over medium heat.
- Add the onion, celery, and carrots. Sauté until the vegetables are softened, about 5–7 minutes. If using garlic, add it during the last minute of cooking.
2. Add Broth and Turkey:
- Pour in the broth and bring to a gentle simmer.
- Add the cooked turkey and potatoes (if using).
3. Simmer the Soup:
- Reduce the heat to low and let the soup simmer for 15–20 minutes, or until the vegetables are tender.
- Taste and season with a small amount of salt if needed (depending on your broth’s salt level).
4. Serve:
- Ladle the soup into bowls and garnish with parsley or a light sprinkle of black pepper, if desired.
Notes
- Customize It: Add rice, noodles, or barley for more substance. For flavor, consider adding bay leaves, thyme, or rosemary.
- Storage: Store in an airtight container in the refrigerator for up to 4 days or freeze for up to 3 months.
- Enhance Flavor: If you find the soup too bland, stir in a splash of lemon juice, a drizzle of olive oil, or a pinch of smoked paprika.
