  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt

Wet Ingredients:

  • 1 cup (225 g) unsalted butter, softened
  • 1 cup (200 g) granulated sugar
  • ¾ cup (150 g) packed light brown sugar
  • 2 large eggs, room temperature
  • 2 tsp vanilla extract

Mix-ins:

  • 1 ½ cups (260 g) semi-sweet chocolate chips
  • Optional: ½ cup (60 g) mini M&M’s or sprinkles

For Decoration (Optional):

  • ½ cup buttercream frosting (store-bought or homemade)
  • Food coloring for frosting (if desired)
  • Additional sprinkles

Instructions

1. Preheat the Oven:

  1. Preheat your oven to 350°F (175°C).
  2. Line a 12-inch pizza pan or a 9×13-inch baking pan with parchment paper or lightly grease it.

2. Mix the Dry Ingredients:

  1. In a medium bowl, whisk together the flour, baking soda, baking powder, and salt. Set aside.

3. Cream the Butter and Sugars:

  1. In a large bowl, use an electric mixer to beat the softened butter, granulated sugar, and brown sugar until light and fluffy (about 2–3 minutes).
  2. Add the eggs one at a time, mixing well after each addition.
  3. Stir in the vanilla extract.

4. Combine Wet and Dry Ingredients:

  1. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  2. Fold in the chocolate chips and optional mix-ins like M&M’s or sprinkles.

5. Shape and Bake the Cookie Cake:

  1. Spread the cookie dough evenly into the prepared pan, pressing it to the edges.
  2. Bake for 20–25 minutes, or until the edges are golden and the center is set.
  3. Remove from the oven and allow the cookie cake to cool completely in the pan.

6. Decorate (Optional):

  1. Once the cookie cake is completely cooled, decorate the edges with buttercream frosting using a piping bag.
  2. Add sprinkles or additional chocolate chips on top for a festive look.

7. Serve:

  1. Slice the cookie cake into wedges or squares and serve as you would a traditional cake.
