Description

These slow-cooked chicken tacos are packed with flavor and require minimal effort. Just toss everything into your crock pot, let it cook, and enjoy juicy, tender chicken wrapped in warm tortillas with your favorite toppings!


Ingredients

For the Chicken:
  • 2 lbs boneless, skinless chicken breasts
  • 1 (10 oz) can diced tomatoes with green chilies (Rotel)
  • 1 packet taco seasoning (or 2 tbsp homemade taco seasoning)
  • ½ cup chicken broth
  • ½ small onion, finely chopped
  • 2 cloves garlic, minced
  • Juice of 1 lime
  • 1 tsp cumin
  • ½ tsp smoked paprika (optional)
For Serving:

 

  • Small corn or flour tortillas
  • Shredded lettuce
  • Diced tomatoes
  • Sliced avocado or guacamole
  • Shredded cheese
  • Sour cream or Greek yogurt
  • Fresh cilantro
  • Lime wedges

Instructions

  • Prepare the Chicken: Place the chicken breasts in the crock pot.
  • Add Seasonings: Sprinkle the taco seasoning, cumin, and smoked paprika over the chicken. Add the chopped onion, minced garlic, and can of diced tomatoes with green chilies.
  • Pour in the Liquids: Add the chicken broth and fresh lime juice for extra flavor.
  • Slow Cook: Cover and cook on low for 6-7 hours or high for 3-4 hours until the chicken is tender and easily shreds.
  • Shred the Chicken: Remove the chicken from the crock pot and shred it with two forks. Return the shredded chicken to the crock pot, stir, and let it soak in the juices for another 15 minutes.
  • Assemble Tacos: Warm the tortillas and fill them with the shredded chicken. Add your favorite toppings and a squeeze of fresh lime juice.
