Description

This Cream Cheese Chicken Crock Pot recipe is the perfect set-it-and-forget-it meal. Tender, slow-cooked chicken is smothered in a creamy, cheesy sauce with a hint of garlic and ranch seasoning. Serve it over rice, pasta, or mashed potatoes for a satisfying and easy dinner!

Ingredients

Scale
Main Ingredients
  • 2 lbs boneless, skinless chicken breasts (or thighs)
  • 1 (8 oz) block cream cheese, softened
  • 1 (10.5 oz) can cream of chicken soup
  • 1 packet (1 oz) ranch seasoning mix
  • 1/2 cup chicken broth
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon black pepper
Optional Add-Ins
  • 1/2 cup shredded cheddar cheese (for extra cheesiness)
  • 1/2 cup cooked and crumbled bacon (for a smoky touch)
  • 1 cup frozen peas or corn (for added texture)

Instructions

  • Prepare the Crock Pot: Place the chicken breasts in the bottom of the slow cooker.
  • Make the Sauce: In a medium bowl, mix together the softened cream cheese, cream of chicken soup, ranch seasoning, chicken broth, garlic powder, onion powder, and black pepper until well combined.
  • Cook: Pour the sauce over the chicken. Cover and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is tender and easily shredded.
  • Shred the Chicken: Using two forks, shred the chicken directly in the slow cooker. Stir well so the chicken soaks up the creamy sauce.
  • Final Touches: If adding cheddar cheese, bacon, or vegetables, stir them in and cook for another 10-15 minutes until warmed through.
  • Serve & Enjoy: Serve over rice, pasta, mashed potatoes, or with crusty bread.

Notes

  • Dairy-Free Option: Use dairy-free cream cheese and a non-dairy alternative for the cream of chicken soup.
  • Thicker Sauce: For a thicker consistency, mix in 1 tablespoon of cornstarch with 2 tablespoons of water in the last 30 minutes of cooking.
  • Storage: Store leftovers in an airtight container in the refrigerator for 3-4 days or freeze for up to 3 months.
