Chocolate Rice Cakes: A Delicious and Healthy Snack

  • Author: Weldl7aj

Description

Chocolate rice cakes are a light, crispy, and satisfying snack that combines the crunch of puffed rice with the rich taste of chocolate. They’re perfect for a guilt-free treat, easy to make at home, and can be customized with toppings like nuts, fruit, or a sprinkle of sea salt for extra flavor.

Ingredients

Scale
Base:
  • 3 cups puffed rice
  • ½ cup dark chocolate (70% or higher), melted
  • 1 tablespoon coconut oil (optional, for smoother chocolate)
  • 1 tablespoon honey or maple syrup (optional, for sweetness)
  • 1 teaspoon vanilla extract (optional)
Toppings (Optional):
  • Chopped nuts (almonds, walnuts, or hazelnuts)
  • Dried fruit (cranberries, raisins, or coconut flakes)
  • Sea salt or cinnamon for extra flavor

Instructions

  • Melt the Chocolate – In a microwave or double boiler, melt the dark chocolate and coconut oil together until smooth. Stir in the honey/maple syrup and vanilla extract if using.
  • Mix with Puffed Rice – In a large bowl, combine the puffed rice with the melted chocolate mixture, ensuring all the rice is evenly coated.
  • Shape the Cakes – Line a baking sheet with parchment paper. Spoon the chocolate-coated rice mixture onto the sheet, shaping into small cakes or pressing into a square pan for bars.
  • Add Toppings – Sprinkle with nuts, dried fruit, or sea salt as desired.
  • Set and Chill – Place in the refrigerator for about 30 minutes or until firm.
  • Serve and Enjoy! – Once set, enjoy as a quick snack or store in an airtight container for up to a week.

Notes

  • Use milk chocolate for a sweeter taste or white chocolate for a fun variation.
  • For extra crunch, add chia seeds or flaxseeds.
  • If making bars, slice them once firm for easy snacking.
