Ingredients
Scale
Base:
- 3 cups puffed rice
- ½ cup dark chocolate (70% or higher), melted
- 1 tablespoon coconut oil (optional, for smoother chocolate)
- 1 tablespoon honey or maple syrup (optional, for sweetness)
- 1 teaspoon vanilla extract (optional)
Toppings (Optional):
- Chopped nuts (almonds, walnuts, or hazelnuts)
- Dried fruit (cranberries, raisins, or coconut flakes)
- Sea salt or cinnamon for extra flavor
Instructions
- Melt the Chocolate – In a microwave or double boiler, melt the dark chocolate and coconut oil together until smooth. Stir in the honey/maple syrup and vanilla extract if using.
- Mix with Puffed Rice – In a large bowl, combine the puffed rice with the melted chocolate mixture, ensuring all the rice is evenly coated.
- Shape the Cakes – Line a baking sheet with parchment paper. Spoon the chocolate-coated rice mixture onto the sheet, shaping into small cakes or pressing into a square pan for bars.
- Add Toppings – Sprinkle with nuts, dried fruit, or sea salt as desired.
- Set and Chill – Place in the refrigerator for about 30 minutes or until firm.
- Serve and Enjoy! – Once set, enjoy as a quick snack or store in an airtight container for up to a week.
Notes
- Use milk chocolate for a sweeter taste or white chocolate for a fun variation.
- For extra crunch, add chia seeds or flaxseeds.
- If making bars, slice them once firm for easy snacking.
