Ingredients

Scale

Main Ingredients:

  • 1 pound boneless, skinless chicken breasts (or thighs)
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 2 medium carrots, sliced
  • 2 celery stalks, chopped
  • 4 cups chicken broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon Italian seasoning
  • 1 cup heavy cream (or half-and-half)
  • 1 tablespoon cornstarch (optional, for thickening)
  • 1 (16-ounce) package potato gnocchi
  • 2 cups fresh spinach, chopped (optional)
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley (for garnish)

Instructions

Step 1: Prepare the Base

  1. Add the chicken, onion, garlic, carrots, celery, chicken broth, salt, pepper, thyme, and Italian seasoning to the crockpot.
  2. Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours until the chicken is tender.

Step 2: Shred the Chicken

  1. Remove the cooked chicken from the crockpot and shred it using two forks.
  2. Return the shredded chicken to the crockpot.

Step 3: Add Cream & Gnocchi

  1. Stir in the heavy cream (or half-and-half).
  2. If you prefer a thicker soup, mix 1 tablespoon of cornstarch with 2 tablespoons of water and stir it into the soup.
  3. Add the gnocchi and let the soup cook for an additional 20-30 minutes on LOW until the gnocchi are soft.

Step 4: Final Touches

  1. If using, stir in the chopped spinach and let it wilt for about 5 minutes.
  2. Sprinkle with Parmesan cheese and fresh parsley before serving.

Notes

  • Make It Lighter: Use milk instead of heavy cream.
  • Vegetable Additions: Add mushrooms or zucchini for extra flavor.
  • Storage: Store leftovers in an airtight container in the fridge for up to 3 days.
  • Reheating: Reheat on the stove over low heat; add a splash of broth if it thickens too much.
