- 1 tsp salt
- ½ tsp black pepper
- ½ tsp smoked paprika
- ½ tsp crushed red pepper flakes (optional)
- 1 tbsp fresh parsley (chopped, for garnish)
For the Roasted Vegetables:
- 2 cups broccoli florets
- 1 cup cherry tomatoes
- 1 red bell pepper (sliced)
- 1 zucchini (sliced)
- 2 tbsp olive oil
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp garlic powder
Instructions
1. Prepare the Roasted Vegetables:
- Preheat the oven to 400°F (200°C).
- In a large bowl, toss the broccoli, cherry tomatoes, red bell pepper, and zucchini with olive oil, salt, black pepper, and garlic powder.
- Spread the vegetables evenly on a baking sheet and roast for 20–25 minutes until tender and slightly crispy.
2. Cook the Steak Bites:
- Heat a large skillet over medium-high heat. Add olive oil.
- Once hot, add the steak cubes in a single layer and sear for 2 minutes without stirring. Flip and cook for another 2 minutes until browned.
- Reduce the heat to medium and add butter and minced garlic. Stir the steak bites in the butter sauce for about 1–2 minutes until coated and fragrant.
- Remove from heat and sprinkle with fresh parsley.
3. Serve:
- Plate the roasted vegetables alongside the garlic butter steak bites.
- Enjoy hot, optionally with a side of mashed potatoes or rice.
Notes
- Steak Choice: Sirloin is great, but you can also use ribeye or filet mignon for extra tenderness.
- Don’t Overcrowd the Pan: Cook the steak in batches if necessary to get a good sear.
- Storage: Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in a skillet for best results.
